Samay Baji (Newari food platter)

Samay Baji is the most popular Newari food of Newari people in Nepal. It consists of many dishes served with beaten rice on a single platter. It is served with local Aila (spirit) or Chyaang (Sakki like white wine). It is traditionally prepared during the festivals and other occasions as a symbol of love and happiness. Hence 'Samay Baji' symbolises a food in a happy time where Samay is time and baji is beaten rice.

Ingredients

    For Khen (Fried boiled eggs)

    1. 1 egg per serving
    2. 1 tsp olive, mustard or sunflower oil
    3. 1/3 tsp turmeric powder
    4. Salt and cumin powder to taste

     

    For  Bhuti (Black-eyed peas curry)

    1. 1 cup soaked black-eyed peas or tinned black-eyes peas
    2. 1 tsp turmeric powder
    3. 1 tsp cumin powder
    4. 1 tsp red chilli powder
    5. 2-3 tbsp mustard oil
    6. Salt to taste

     

    For Saag (Spinach)

    1. 2 bunch of spinach
    2. 1 tsp red chilli powder
    3. 1 tsp cumin powder
    4. Salt to taste

     

    For Fried Aloo  (Fried boiled potatoes)

    1. 2 boiled potatoes
    2. 1/2 tsp cumin seeds
    3. 1/2 tsp turmeric powder
    4. Salt to taste
    5. 1/2 tsp cumin-coriander powder
    6. 1/2 tsp chilli powder
    7. 1/2 tsp garlic powder
    8. 1/2 tsp ginger powder
    9. 1 tbsp mustard oil

     

    For Bhatmaas  (Brown or black soybean)

    1. 1 cup brown/black soybean seeds
    2. 1 tsp cumin powder
    3. 1 tsp red chilli powder
    4. 2 cloves of garlic thinly sliced
    5. 1 inch of ginger sliced
    6. 2 tbsp mustard oil 
    7. Salt to taste

Steps

    For Khen (Fried boiled eggs)

    1. Boil eggs
    2. Heat oil in a pan. Once the oil is hot then fry boiled eggs and add turmeric powder. Roll over the eggs to get turmeric colour on most sides. Let it burn a bit on one side.
    3. Sprinkle salt and cumin powder on fried eggs. (see carousel image 2)

     

    For  Bhuti (Black-eyed peas curry)

    1. Soak black-eyed peas overnight and boil.
    2. Heat oil in a pan.
    3. Once the oil is hot, add boiled black-eyes peas and turmeric powder for few mins. (see carousel image 3)
    4. Add cumin powder, salt and chilli powder and mix well.

     

    For Saag (Spinach)

    1. Heat oil in a pan.
    2. Once the oil is hot, add saag and cook for 2-3 mins.
    3. Add cumin powder, salt and chilli powder and mix well.

     

    For Fried Aloo  (Fried boiled potatoes)

    1. Heat oil in a pan. 
    2. Once the oil is hot, fry cumin seeds until it goes dark black. Now add boiled cut potatoes.
    3. Add turmeric powder, salt, cumin-coriander powder, chilli powder, garlic powder and ginger powder on the frying pan. (see carousel image 5)
    4. Mix well and cook for few mins.

     

    For Bhatmaas  (Brown or black soybean)

    1. Heat oil in a pan.
    2. Once the oil is hot, fry Bhatmaas for few mins.
    3. Put it in a bowl and add cumin powder, chilli powder, sliced garlic, sliced ginger and oil. (see carousel image 6)
    4. Mix it well, after a few minutes it is ready to serve.

Where to buy?

You can easily buy all ingredients at the department store, grocery, Asian shop. Dried black or brown soybean are easily found in a Chinese shop, Amazon or eBay.

Recipe Notes

  • Instead of mustard oil, you can use any oil but mustard oil gives you intense flavour. 
  • It consists of many dishes with beaten rice in a single platter.
